Preserving the First Tier of Your Wedding Cake

Many couples choose to preserve the top-tier of their wedding cake to eat it on their  one-year anniversary. It is considered good luck and an omen for long life together.

You first need to ask a responsible person to take the top layer home. This layer should be placed into the freezer uncovered, for 24 hours. Then the cake should be wrapped at least twice in plastic wrap. Then it should be wrapped in at least two layers of aluminum foil and returned to the freezer. It can be placed in a cake box to protect it from being damaged by the other items in the freezer.

**Never keep the cake in a frost-free freezer, because the constant defrosting will draw the moisture out of the cake. If you are moving within the year, leave the cake in a family member or friend's freezer after the wedding to avoid moving the cake before your anniversary.

Thawing
The cake should then be removed 48 hours before the anniversary and placed in the refrigerator to defrost. The morning of their anniversary, place the cake on the counter so it can reach room temperature. If the cake is buttercream, remove it only an hour or two before consuming.
The cake will be as beautiful and delicious as the day of the wedding!
